A high-country Ethiopian natural for mornings that deserve more than ordinary coffee.

High Country Natural is an expressive light roast from Ethiopia's Sidama highlands. Naturally processed and dried on raised beds, it delivers vibrant berry and stone-fruit character, jasmine-like florals and layered, wine-like depth. This is a bright, aromatic coffee with the kind of complexity Ethiopian heirloom varieties are known for.

Why Sidama tastes different

Ethiopia is coffee's birthplace, and Sidama is one of its most celebrated highland regions. The area's elevation, microclimates and extraordinary genetic diversity allow the coffee cherries to mature slowly and develop deep aromatic complexity.

Ethiopian heirloom is not one simple variety. It describes a remarkably diverse and largely unclassified family of indigenous Arabica cultivars. That genetic richness is what creates the layered fruit, floral character and wine-like depth that makes this coffee stand apart.

What natural processing means

Natural processing dries the coffee seed inside the whole ripe cherry. Raised beds allow air to circulate around the fruit while it dries, helping create consistent fermentation and preserve cup clarity. The process intensifies fruit and floral character without sacrificing the clean finish expected from a carefully handled specialty lot.

Clean-coffee testing

The roasting supplier reports independent finished-coffee testing for mycotoxins, mold, yeast and heavy metals. The coffee is roasted to order in small batches and shipped fresh.

Best ways to brew it

Pour-over or Chemex: Best for opening the floral aromatics and showing the coffee's clean fruit layers.

AeroPress: Builds sweetness while keeping the berry and stone-fruit notes bright.

Drip coffee: An easy everyday method for a lighter, aromatic cup.

French press or cold brew: Pulls forward the deeper fruit character and wine-like body.

Choose your grind

Whole Bean: Grind fresh for maximum aroma, clarity and control.

Ground: Ready for the coffee maker at home, in the barn office or beside the trailer.
